Meet the Makers

Executive Chef Aaron Rayor leads the culinary vision at The Caledonian. A California native with deep respect for seasonality and sustainability, he brings a modern, ingredient-led approach to the kitchen. Through close collaboration with regional farmers and purveyors and a kitchen culture rooted in curiosity and care, Chef Rayor has created a place where the community can gather over thoughtful cuisine and shared experiences.  

 

Nicelle Escalona is General Manager of Restaurant, Bar + Events at The Caledonian. Throughout her career across celebrated hotels and restaurants throughout California, she has brought a blend of heart and intentionality, shaping a vision rooted in elevated warmth and community-focused dining. Passionate about showcasing Monterey’s local wines and the people behind them, she curates experiences in partnership with the region’s farmers, vintners, and makers. 

 

With more than 15 years behind the bar, The Caledonian’s Lead Bartender Nicholas Stettenbenz loves fostering the kind of welcoming atmosphere that turns first-timers into regulars – new friends into lasting ones.
